This delicious sweet coleslaw will convert any coleslaw hater into a lover. I recently was at a family birthday party and my uncle brought his version of "sweet coleslaw." Normally I would avoid coleslaw as I don't typically enjoy it however he convinced me to give it a try. It was so delicious literally everyone was asking "have you tried that coleslaw?...it is so good." Shortly after this party I decided to try my best to replicate his recipe purely based on taste and memory. It is a refreshing balance of sweet and savory flavors with a crunchy and fresh texture. It is safe to say I will now be a coleslaw eater....but maybe just my own.
Ingredients:
1/4 Cup Apple Cider Vinegar
1/4 Cup Mayonnaise (optional)
1/4 Cup Brown Sugar
1 Tbsp Fresh Maple Syrup (optional)
1/2 Tsp Salt
1/2 Tsp Fresh Ground Pepper
1/2 Tsp Celery Salt
1/3 Tsp Cayenne Pepper
1/4 Cup Olive Oil
1/2 Tsp Paprika
2 Large Carrots, Peeled and Shredded
2 Red Onions, thinly sliced
1/2 Large Green or Red Cabbage, shredded thinly
Directions:
Wash and prepare your vegetables, then add to a large bowl.
In a separate bowl, combine remaining ingredients except mayonnaise to a microwave safe bowl then microwave for 30 seconds or so. Once sugar has dissolved, add in your mayonnaise if you prefer a creamier coleslaw or skip this step if you like it as is.
Pour over your shredded vegetables and toss together. Allow to rest at least 20 minutes for maximum flavor. Serve cold.
This will keep stored in the fridge for several days in an air tight container. As it sits it will begin to soften some.
