Sushi Bowl

Sushi Bowl

This sushi bowl recipe is very light and refreshing yet filling and comforting at the same time. If you struggle with making sushi rolls but love the flavor of sushi, then this may be the dish you were looking for. In this bowl we use seasoned rice that is similar in flavor to sushi rice but instead of using sticky sushi rice we use regular white rice. For the toppings we have a delicious assortment including creamy, lemon and dill cucumbers, quick pickled radishes, honey garlic shrimp with crispy panko, crunchy carrots, eggs, green onions, and fresh sliced avocado. Top it all of with a drizzle of sushi sauce and the the umami set in. If you choose, you can try and mix up the toppings and get creative with it. Ingredients / Directions:

Note: Prepare in order listed to allow veggies to pickle and rice to cook.


Seasoned Rice:

2 Cups of White Rice, cooked

2 tbsp Rice Vinegar and 1 tbsp Granular Sugar.

- toss cooked rice with vinegar and sugar then set aside.


Lemon Dill Cucumbers:

Half a Cucumber, sliced

1/2 Cup Sour Cream

1/2 cup Mayo

Zest from 1 Lemon

Lemon Juice from half a Lemon

Pinch salt and pepper

1 tsp dill

- Toss all the lemon dill sauce ingredients together in a bowl, then once combined fold in your sliced cucumbers. Allow to sit at least 20 minutes in the fridge for best flavor.


Pickled Radish:

2 Large Radishes, thinly sliced

2 tbsp White Vinegar

1 tsp Fresh Lemon Juice

Pinch of salt

- Mix the liquid ingredients together first then toss radishes in the liquid. Allow to sit together for at least 20minutes in the fridge.


Shrimp:

Shrimp peeled and cleaned

1/4 cup Honey Garlic Sauce

- Sauté until cooked in honey garlic sauce then set aside.


Crispy Panko:

1 Cup Panko Crumbs

1 Tsp Salt

3 Tbsp Vegetable Oil

- Mix together, then spread out into a thin layer on a lined baking sheet and toast until golden brown ( 2 minutes)


Sushi Sauce:

1/2 Cup Mayo

1 Tbsp Siracha (add more if desired)

- Mix together then set aside.


Additional Toppings:

4 Hard boiled Eggs, sliced

2 Carrots peeled and sliced into thin strips

2 Avocado, sliced

thinly sliced green onions or chives.

Soya Sauce (Optional of desired)

salt and pepper to taste


- Once all the ingredients are prepared, first add the rice to a bowl, then top with each of the ingredients you have prepared. see phot below for inspiration. Drizzle sushi sauce on top and an extra sprinkle of salt and pepper. For the panko, I opted to sprinkle this on top of the shrimp to give it some crunch. Add soya sauce if desired but I found the with sushi sauce and the lemon sauce on the cucumbers it was perfect without it.
