Strawberry Apple Crisp

This strawberry apple crisp is super easy to make with only a few simple ingredients. Featuring fresh strawberries and apples reduced into a delicious compote, topped with a buttery oatmeal, brown sugar and cinnamon crisp. The one thing I love about this recipe is you can change up the fruit and have a similar result. I love to serve this piping hot with a scoop of ice cold vanilla ice cream.

Ingredients:

4 Gala Apples, peeled and diced

1 lb Ripe Strawberries, cored and diced

2 Tbsp Lemon Juice

1 Tbsp Cornstarch

2 Tbsp Brown sugar

Pinch of salt

2 Tbsp Cinnamon

TOPPING:

1 1/4 Cup Dry Oatmeal Flakes

1/4 Cup Melted Butter

1/4 Cup Brown Sugar

1 Tbsp Cinnamon

Directions:

  • Preheat oven to 425F.

  • Add to an oven safe baking dish your diced apples and strawberries. Add lemon juice, cornstarch, cinnamon, salt and brown sugar. Stir together to combine.

  • In a separate bowl melt your butter. Add cinnamon, brown sugar and oatmeal flakes. Stir together until combined.

  • Add your Oatmeal mixture in a thin layer to the top of the apples and strawberries.

  • Bake uncovered for 30 minutes until topping is crispy and golden brown.

  • Serve hot and enjoy. I love to serve this with a scoop of vanilla ice cream.
