This pizza soup recipe is inspired by a recipe my childhood friend shared with me from home ec class. Featuring a savory tomato based broth with macaroni noodles, a healthy helping of cheese and crispy pepperoni on top. Whenever my kids eat this soup, they compete to have the best "cheese pull". There are so many memories that come with homecooked meals. What are yours?
Ingredients:
1 Cup Elbow Macaroni
1 Large Onion, diced
1 Can Diced Tomatoes
1 Can Tomato paste
1 Tsp Worcestershire Sauce
2 Cloves Garlic, minced
2 Cups Beef Stock
1/2 Tsp Basil
1/2 Tsp Parsley
1/2 Tsp Pepper
1/2 Cup Sliced Pepperoni
Salt and Pepper
2 to 3 Cups of Shredded Mozzarella Cheese
Directions:
Sauté sliced pepperoni in and large soup pot over medium heat. Once crisp, remove and set aside. Add in your diced onion and cook 2 minutes.
Add remaining ingredients withholding the macaroni noodles. Allow to simmer for 15 minutes.
Meanwhile add your elbow noodles to a pot of salted boiling water. Cook to al dente, then strain. Add noodles to your simmering soup and allow to cook another minute or 2. Then portion into bowls and top with a healthy sprinkle of shredded cheese followed by your crispy pepperoni.
