This velevety lasagna soup, features a rich and tangy, tomato and beef based stock, reminiscent of homemade lasagna. It's a warm and comforting meal that keeps you wanting more.
Ingredients:
1 lb Ground Beef/Pork Mix
1 Can Spaghetti Sauce
3 Cups Water
2 Cups Milk
1 Can Tomato Paste
3 to 4 Tbsp Beef Stock Powder
1.5 Tsp Dry Basil
1.5 Tsp Dry Parsley
1.5 Tsp Dry Oregano
1 Tsp Ground Pepper
1/2 Tsp of Salt
2 Large Onions, Diced
1 Can Sliced Mushroom or (2 cups fresh)
6 Garlic Cloves, Minced
1 Cup Sour Cream
1/2 Cup/Brick Cream Cheese
2 1/2 Cups Mini Lasagna Noodles
2 Cups Shredded Mozzarella Cheese (for topping)
Directions:
Saute ground beef/pork in a large pot, add diced onions, sliced mushroom, salt and pepper. Add minced garlic just prior to being fully cooked.
Once cooked, add remaining ingredients (except noodles) and cook together for atleast 10 minutes, stirring occasionally.
Meanwhile, add noodles to a pot of salted water and cook to al dente. Strain and finish cooking in your soup for another few minutes.
Check the taste of your soup. Add additional seasonings as desired.
Serve hot and top with shredded mozzarella Cheese.
