This "juicy classic meatloaf" is something to be craved. Super juicy and the perfect balance of flavor. Using both beef and pork then topped with that traditional ketchup based sauce, its super easy to make and probably doesn't require any special ingredients you don't already have. We have also made this in individual portions using a muffin tin which was fun and the kids thought it was the coolest. Ingredients:
2 onions diced
2 garlic cloves minced
1 egg
1 cup milk
1 cup dried bread crumbs (I like Italian seasoned)
1 1/2lb ground beef pork mix
1 tsp basil
1 tsp parsley
salt and pepper to taste
Topping:
2 tbsp brown sugar
2 tbsp mustard
1/3 cup ketchup
salt and pepper to taste
1/4 tsp Worcestershire sauce
Directions:
- Preheat oven to 350 F
- In a bowl, combine, milk and egg together. Then add your bread crumbs and seasonings. Lastly mix the beef in. Be careful not to overwork the meat.
- Spray a loaf pan and poor meat mix into the pan.
- In a 2nd bowl, mix together topping ingredients, ketchup, mustard, brown sugar, Worcestershire sauce, salt and pepper. Pour over the top of your meat and cover with tin foil.
- Bake for approximately 1 hour, until internal temperature of 155 to 165 F. (will cook slower in a glass dish)
- Uncover and bake for an additional 5 to 10 min.
- Remove from oven and return foil to pan. Allow to rest for 10 min before slicing. This allows the juices to absorb back into the meat.
