This recipe is a classic take on French onion soup, with red wine, onions and beef broth being the star ingredients. A lot of the flavor comes from the caramelization of the onions, which is a bit time consuming but worth your patience. Ingredients:
10 Large Yellow Onions, peeled and sliced
1/4 Cup Butter
6 Cloves Garlic, minced
2 Cartons Beef Stock
1/2 Cup red wine
1 tsp Worcestershire Sauce
Salt and pepper to taste
2 Cups Shredded gruyere or mozzarella Cheese
Fresh Baked Bread, sliced
Directions:
Slice your onions and add to a pot with melted butter. Sprinkle with salt and pepper and sauté together over medium low head until caramelized. This will take up to 45 minutes to accomplish, stirring regularly.
Once the onions have caramelized, add your minced garlic and stir together for another minute.
Deglaze the pan with wine and cook together for 2 minutes.
Add beef stock and Worcestershire sauce, stir together and cover. Allow to simmer for at least 30 minutes.
Meanwhile, shred 2 cups of mozzarella cheese and slice your bread to place on top of your soup. Toast the bread and set aside.
Place oven safe bowl on a cookie sheet.
Spoon hot soup into an oven save bowl and top with your toasted bread and cheese.
Place in the oven to broil just until cheese is melted.
