This easy baked broccoli dish is an awesome make ahead side dish for any occasion. Broccoli and cheese are a perfect pairing and you could just stop there, but why not go the next step and make a game changing casserole instead. This dish is not only easy to make but it is sure to please the whole family with its comforting flavors. Ingredients:
2 Head of Broccoli, washed and Cut
1 Can Campbell Creamy Mushroom Soup
1/2 Cup Milk
1/4 Cup Cream Cheese, Softened
2 Cups shredded Cheddar Cheese
1 Large Onion Finely Diced
1 Clove of Garlic Minced
Pinch of Salt and Pepper
Bread Crumb Topping:
1 Cup Shredded Medium Cheddar Cheese
1 Cup Panko Crumbs
1/2 Cup Italian Seasoned Bread Crumbs
Pinch of Parsley (extra pinch if using plain bread crumbs)
1 Tbsp Vegetable Oil
Pinch of Salt
Optional 2 Tbsp Parmesan Cheese *
Directions:
- Preheat your oven to 425 F. Set aside a large rectangular baking dish with high sides.
- In a large bowl, mix together your mushroom soup, milk, cream cheese, onions, garlic, salt and pepper. Once thoroughly blended add in your broccoli florets and 2 cups of shredded cheese. Stir it all together until broccoli is well coated in the sauce. Pour into your baking dish and sprinkle with your additional 1 cup of shredded cheese. and set aside.
- For the bread crumb topping: to a medium bowl add your bread crumbs, panko, salt, oil, parsley, and parmesan cheese*. Stir it all together until combined. Next, sprinkle your bread crumb mix evenly across the top of your broccoli. Cover in tin foil and bake until the broccoli is just tender (I prefer mine a bit on the crunchy side). Approximately 20 to 30 minutes.
TIP: Place your baking dish on top of a cookie sheet just incase some of the liquid bubbles up over the sides of the dish.
- Uncover and broil the top for 2 minutes until golden brown and crisp on top.
