Cheesy Stovetop Carrots

Cheesy Stovetop Carrots

These carrots are so delicious that even the kids will love them. As the saying goes, everything is better with cheese! This cheesy stovetop carrots recipe is inspired by my mother in law and grandma's recipe with the addition of cheese. Cheesy stovetop carrots are super easy to make and pair well with any dish. Plus carrots offer an array of health benefits including helping to maintain stable blood sugar levels thanks to there fiber content. They are also loaded with Vitamin A and beta-carotene which evidence suggests can lower your risk for diabetes. Carrots are high in calcium and vitamin K which help strengthen your bones. (Nelson, A , WebMD (2020). With all these health benefits plus delicious taste you can't go wrong.


Ingredients:

8 Large Carrots peeled and sliced

2 Large Onions, sliced thinly into 1 inch lengths

2 Tbsp Butter

3 Cups Water or left over potatoes water

Salt and Pepper

2 Cups Shredded Cheddar Cheese

2 Tbsp Corn Starch in 2 Tbsp Water (to make a slurry for thickening)


Directions:

- Add sliced onions to a pot along with butter and sauté until fragrant. Next, add your sliced and peeled carrots along with the water, salt and pepper. Cover and simmer until carrots are cooked.

- In a separate bowl, mix together corn starch and water to make a slurry. Add the slurry to your pot to thicken your sauce. Once thickened, remove from heat and add your shredded cheese, stirring it all together until combined.

- Serve hot.
